Hey Y’all!
I know there are so many cowboy cookie recipes out there but after trying out a few recipes and not enjoying them, I thought I would look up the definition of a cowboy cookie and make my own recipe.
Cowboy cookies should be slightly golden brown, crispy on the outside and chewy in the middle. They should also be packed with ingredients like chocolate, oats or nuts but most importantly taste delicious! So here is my version of the cowboy cookie…
Makes: 18 Total Cooking Time: 45 minutes
Ingredients:
1/3 cup castor sugar
1/3 cup brown sugar
125g butter, at room temperature
1 egg
1 cup self raising flour
1 cup rolled oats
1 cup dark chocolate chunks
Instructions:
1. Preheat the oven to 180°C (356°F). Line baking trays with non-stick baking paper.
2. Place the butter, sugars and egg together in a bowl and beat together until light and creamy.
3. Mix in the flour. Then fold through the oats and chocolate chunks.
4. Place tablespoons of the mixture onto the baking trays about 10cm apart. Bake in the oven for 10-12 minutes or until slightly golden brown. Leave them to sit on the tray for about ten minutes to cool before transferring them.
