Easy Granola Bars (Gluten & Dairy Free)

Hey friends!

It’s been about ten months since I last shared a recipe so I’m definitely overdue for another one.  Today I’m sharing a go-to granola bar recipe that I’ve been making for years and absolutely love.  It’s simple, no-bake and perfect to have on hand for a quick snack.

Makes: 6–8 granola bars  Total Time: 15 minutes (+ chilling time)

Ingredients:

  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 cup rolled oats*
  • 1/2 cup chopped almonds
  • 1/2 cup cranberries
  • 1/2 cup dark chocolate *

Instructions:

  1. Line a small loaf tin or pyrex dish (approximately 15cm x 20cm) with non-stick baking paper.
  2. In a bowl, whisk together the almond butter and honey until smooth and well combined.  Microwave for 15 seconds to soften, which helps the mixture come together more easily.
  3. Place the oats into a food processor and blend until they resemble a coarse flour.
  4. Roughly chop the almonds, cranberries and dark chocolate.
  5. Add the blended oats, almonds, cranberries and dark chocolate to the wet mixture and mix until evenly combined.
  6. Press the mixture firmly into the prepared tin, smoothing the top with the back of a spoon.
  7. Place in the fridge for at least 2 hours, or until set.
  8. Once firm, remove from the tin and slice into 6–8 bars, depending on how big or small you’d like them.
  9. Store in the fridge and enjoy for up to 7 days*.

Recipe Notes:

  • If you want this recipe to be gluten-free, be sure to use certified gluten-free rolled oats.
  • For a dairy-free option, use dairy-free dark chocolate.
  • To extend the shelf life, store the bars in the freezer for up to 3 months. Remove and allow to soften slightly before enjoying.
